Lucky Spoon Frosty Zucchini Cucpakes

We've all come to expect Guinness, Bailey's and Irish Coffee cupcakes for St. Patrick's Day. There's also the occasional Lucky Charms or Green Velvet cupcakes to get you in the spirit. But no other sweet treat says St. Patrick's Day quite like Lucky Spoon Frosty Zucchini Cupcakes. They're lucky and green AND they're gluten free!

Luckily, I decided to try these late last year when I saw them at Pavilions grocery store in Burbank because when I looked for them on the Lucky Spoon website, this flavor isn't to be found. 
The cupcakes themselves are smaller than standard cupcake size, however,  they do come four to a pack, so there's that.




They're dense little cupcakes with the cake itself being pretty dry but it does have a lot of flavor! There are tiny, little specks of green which I assume is zucchini but the flavor I tasted wasn't zucchini, it was more of a mix of really tasty spices. Think of how a slice of zucchini bread tastes only without all the butter.

The frosting was also a bit dry as far as frostings go and the consistency was a less creamy version of buttercream. There wasn't that much frosting on the cupcake and it wasn't very sweet. Is there gluten in frosting? In my search for the answer I found out that yes, there is gluten in regular frosting. I also found recipes for gluten-free buttercream frosting...which confirmed my suspicions.

Gluten, is a type of protein found in starch and cereal grains, giving dough it's elasticity texture. And, it explains why the frosting had a different consistency.
No wonder it's so difficult to find gluten-free baked goods! If you're gluten-free, you are in luck because Lucky Spoon makes cookies, muffins and cupcakes!
